Well, your three options with pistol grips are the Blackfeather, the SAGE and the AG composites carbon fiber stock with AR buffer tube style buttstock.
The Blackfeather and the SAGE are the two aluminum chassis systems which will require some minor gunsmithing to fit the operating rod block onto.
The SAGE is the heavier of the two while the Blackfeather is lighter and retains the contours of the original M14 stock. Both can be made to shoot very well, in my experience.
As far as cheek weld, the Magpul CTR stock should allow you to adjust your cheek height for either scope or irons if you have a scope mount which allows you to see the iron sights below or through the mount.
A Bassett high picatinny mount will sit high enough to see iron sights below the mount. I've never owned a Sadlak but you should be able to see through the mount to use the iron sights.
