Basic Pickling Brine

For every pound of vegetable:

1 cup vinegar (any kind except balsamic)
1 cup water
1/2 cup sugar
1 Tablespoon kosher salt
Extras: fresh herbs, red pepper flakes, mustard seed, cumin seed, pepper corns, cloves of garlic, or any other pickling spice

Pickling is a good way to preserve many vegetables & some meats.

down south pickling is right up there beside frying like okra fried or pickled. we even pickle watermelon rind so nothing goes to waste there. next to jams and preserves pickling can help save fresh to stored and keep food all year long.

No offense HH, but I've always preferred Jack Daniels for the best pickling. GI2

That's exactly what I was referring to HH. Sometimes I use a little humor otherwise some of these threads get depressing.
