Is it possible for an M14 to come with a mix of parts? Say for instance a Winchester having an H&R bolt. Or should these parts come exclusively, Winchester rifle fitted with a Winchester bolt?

When the M14 left the manufacturer it would normally have parts made by that manufacturer.

However, because of problems encountered with some H&R and Winchester produced M14's these rifles were sent to Raritan Arsenal for re-test and reinspection. These M14's undoubtably received parts (mostly bolts) from other mfg's, probably SA, before they even made it into military issue.

Of course, most M14's in service would wind up with a potpourri of components from different mfg's after they went through normal inspection and overhaul (or repair) proceedures before their service life ended. No different than the Garand!
