I am the cook of the family, so I am going to try this very soon, now that the pumpkins are all over the place. It beats blowing the hell out of them.

One thing I'm learning is that there are special cooking varieties of pumpkin. The big ones used for jack o'lanterns that I've tried in past years have almost no flavour, and what you want are the specially developed little 'pie pumpkins' shown in the OP photos. Maybe everyone already knew this, but as far as I can see these were never sold locally until this year. I'm going to be experimenting with those, and also with another larger variety called 'fairyland.' Since I'm very fond of pumpkin's flavour, I'm hoping for great success.

I have to say that retirement has greatly improved both my cooking and eating habits, my MD tells me my recent bloodwork showed a steep decline in both bad cholesterol and blood sugar levels....
